Peanut Curry Chicken Serves 4

(O.K. Maybe 35 minutes)

2 2 lb. chickens ¼ cup oil ¼ cup water dash ginger

½ cup diced onion 1 lg diced tomato 1 pkg. Frozen chopped broccoli (10 oz.)

4 tbsp garlic powder 2 tbsp curry powder ¼ cup crunchy peanut butter

Brown onion in skillet with oil, garlic and curry powder. Remove onion, and

brown chicken in the same oil.

Simmer in covered skillet for 25 minutes.

Add vegetables and continue simmering for 5 more minutes.

Blend peanut butter, ginger and water; stir into skillet.

Bring to boil. Serve over rice. Save juices for gravy.
